  1. Separate the egg whites carefully, ensuring no yolks slip in.
  2. In a mixing bowl, combine the egg whites and a pinch of kosher salt.
  3. Begin whipping at medium speed until the egg whites froth and turn pale.
  4. Gradually add sugar, spoonful by spoonful, allowing it to blend as you whip.
  5. Once all the sugar is incorporated, boost the speed to high and watch for soft peaks to form.
  6. Drizzle in the vanilla and sprinkle the ground cinnamon.
  7. Keep whipping for an extra minute until the frosting turns velvety and glossy.
