Preparation
  1. Cut the cauliflower into florets and steam or boil until tender.
  2. Drain the cauliflower and place in a blender or food processor.
  3. Add butter, cream or milk, and season with salt, pepper, and optional garlic powder.
  4. Blend until smooth—don’t be shy! The more you blend, the creamier it will be.
  5. Taste and adjust seasoning if necessary. Sometimes a little more salt makes a big difference.
  6. Serve hot, garnished with chives if desired.

Notes

Mashed Cauliflower pairs beautifully with meats, seafood, or can stand alone as a vegetarian dish. Leftovers can be refrigerated for up to 3 days or frozen for up to a month. For best results, reheat gently.
