Preparation
- Cut the cauliflower into florets and steam or boil until tender.
- Drain the cauliflower and place in a blender or food processor.
- Add butter, cream or milk, and season with salt, pepper, and optional garlic powder.
- Blend until smooth—don’t be shy! The more you blend, the creamier it will be.
- Taste and adjust seasoning if necessary. Sometimes a little more salt makes a big difference.
- Serve hot, garnished with chives if desired.
Notes
Mashed Cauliflower pairs beautifully with meats, seafood, or can stand alone as a vegetarian dish. Leftovers can be refrigerated for up to 3 days or frozen for up to a month. For best results, reheat gently.
