Preparation

  3. Arrange the seasoned chicken in a single layer in the center of a large baking sheet (at least 13x18 inches), leaving ample space for the vegetables. Avoid overcrowding the pan; use two sheets if necessary for even cooking.
  4. In the same bowl, toss the zucchini, cherry tomatoes, red onion, and garlic with the remaining 2 tablespoons of olive oil and lemon juice until well combined.
  5. Spread the vegetables around the chicken on the baking sheet, ensuring even distribution for consistent roasting.
Cooking
  1. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
  2. Remove from the oven and sprinkle with Kalamata olives, crumbled feta cheese, and fresh parsley while still hot.
