  • 1/2 small red onion (optional) You can replace it with green onions or omit if you prefer something milder.
  • 3/4 bunch parsley If parsley isn’t available, you can use fresh mint for a different twist.
  • to taste Kosher salt Use sea salt or table salt as an alternative.
  • 1/2 teaspoon black pepper White pepper could work too but will alter the color slightly.
  • 1 teaspoon ground sumac Lemon zest can be a substitute for a similar citrus zing.
  • 2 tablespoons extra virgin olive oil Substitute with avocado oil or any preferred light oil if necessary.
  • 2 teaspoons freshly squeezed lemon juice Lime juice can also be a refreshing alternative.

  1. In a large mixing bowl, gently combine the diced tomatoes, diced cucumber, and chopped parsley.
  2. Season the mixture with kosher salt and toss it gently to ensure an even coating. Set aside for about 5 minutes; this allows the ingredients to release their juices.
  3. Now, add the ground sumac, olive oil, and lemon juice to the bowl. Give everything a gentle toss to combine.
  4. Taste your creation and adjust the seasoning to your liking—don’t hesitate to add more salt or lemon if it needs brightening.
