Wet Ingredients
  • 3/4 cup butter, chilled Can substitute with ghee or coconut oil.
  • 1.25 cups chilled buttermilk Can substitute with yogurt or a non-dairy alternative with added vinegar.

Preparation
  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, sugar, and salt until well combined.
  3. Cut the chilled butter into small cubes and work it into the dry ingredients until the mixture resembles coarse crumbs.
  4. Pour the cold buttermilk into the crumb mixture and stir gently until the dough comes together; avoid overmixing.
  5. Turn the dough onto a floured surface, knead it a few times, then roll out to about 1 inch thick.
  6. Use a biscuit cutter or glass rim to cut out biscuits and place them close together on the prepared baking sheet.
Baking
  1. Bake in the preheated oven for 12-15 minutes until the tops are golden brown.
  2. Serve warm with butter, jam, or honey.

Notes

Avoid overworking the dough to prevent tough biscuits. Store butter in the freezer for about 15 minutes before use for best results. Rotate the baking sheet halfway through baking for even results.
