Preparation
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a medium bowl, mix yogurt, Parmesan, garlic powder, onion powder, paprika, salt, and pepper until smooth.
- Place chicken breasts in the baking dish. Spread the yogurt mixture evenly over the top of each piece.
Cooking
- Bake uncovered for 35–40 minutes, or until chicken reaches an internal temperature of 165°F (74°C). The topping should be golden and slightly bubbly.
- Sprinkle with fresh parsley or chives before serving. Great with rice, mashed potatoes, or roasted vegetables.
Notes
To avoid mistakes, don’t skip the marinating time; even a quick marination helps to tenderize the chicken further. Use a meat thermometer to ensure perfect doneness and let the chicken rest for a few minutes post-baking for the juices to redistribute. Store any leftovers in an airtight container in the refrigerator for up to three days. Can be frozen for up to three months.
