For the Chicken Burgers

Method
 

Preparation
  1. Preheat the grill to medium-high heat or set a grill pan on the stove.
  2. In a bowl, combine the ground chicken, grated red onion, cumin, smoked paprika, minced garlic, egg, almond flour, salt, lime juice, jalapeño, and cilantro. Blend until evenly combined.
  3. Shape the mixture into four patties, about half an inch thick.
  4. In another bowl, prepare the pico de gallo by mixing the chopped tomatoes, onion, cilantro, jalapeño, and lime juice. Season with a pinch of salt and set aside.
  5. Mash the avocado in a bowl until chunky.
  6. Make the chipotle mayo by combining mayonnaise, minced chipotle peppers, lime juice, and salt in a bowl until smooth.
Grilling
  1. Place the patties on the grill and cook for about 5-7 minutes on each side until the internal temperature reaches 165°F (74°C).
Assembly
  1. On each bottom bun, place a romaine lettuce leaf, add a chicken patty, top with chipotle mayo, mashed avocado, and pico de gallo. Finish with the top bun.
