Preparation
  1. Preheat the oven to 425°F and line one or two sheet pans with parchment paper or a Silpat.
  2. In a large skillet, add the diced onion and ground beef, adding olive oil if necessary. Cook over medium-high heat for 5 to 6 minutes until the beef is fully cooked and the onions are soft and translucent.
  3. Stir in the taco seasoning until fully combined with the beef mixture, then remove the skillet from heat and set aside.
  4. Place the frozen pizza crusts on the lined sheet pans and spread an equal amount of refried beans on each crust, leaving a 1-inch margin from the edges.
  5. Evenly distribute the beef and onion mixture over the refried beans on both crusts.
  6. Sprinkle ¾ cup of mozzarella cheese and 1 cup of Mexican cheddar cheese blend over each pizza.
  7. Place the sheet pans in the preheated oven and bake for about 12 minutes or until the cheese is melted and the crusts are cooked to your desired doneness.
  8. Top the baked pizzas with diced tomatoes and fresh cilantro, and serve immediately for the best flavor.

To achieve the perfect pizza texture, ensure that the crusts are fully thawed before adding the toppings. Consider pre-baking the crusts for a few minutes for an extra crispy base.
