Ingredients

Brownie Ingredients
  • 1 cup unsweetened cocoa powder Adds deep chocolate flavor; for a lighter touch, you can substitute with carob powder.
  • 2 cups granulated sugar Enhances sweetness; coconut sugar can be used for a healthier alternative.
  • 1 cup all-purpose flour Provides structure; whole wheat flour is a nutritious swap.
  • 1/2 teaspoon salt Balances sweetness; ensure it’s fine sea salt for even distribution.
  • 1/2 cup unsalted butter, melted Moisture and richness; a vegan butter or coconut oil can be a great substitute.
  • 4 large eggs Binds the ingredients together; flaxseed meal mixed with water works for a vegan option.
  • 2 teaspoons vanilla extract Adds a warm flavor; imitation vanilla extract can be a cost-effective substitute.
  • 1 cup strong brewed coffee, cooled Intensifies flavor; espresso is ideal, but any strong coffee will do.
Frosting Ingredients
  • 1/2 cup powdered sugar Sweetens the frosting; can use monk fruit powdered sugar for a low-calorie version.
  • 1/4 cup unsweetened cocoa powder Ensures chocolate taste; cocoa nibs can be an interesting change for some texture.
  • 2 tablespoons butter, softened Adds creaminess; vegan butter is a suitable alternative.
  • 1 tablespoon brewed coffee Enhances mocha flavor; use the same strong coffee you brewed for the brownies.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the cocoa powder, sugar, flour, and salt until combined.
  3. Add the melted butter, eggs, vanilla extract, and cooled coffee. Mix until smooth.
  4. Pour the batter into a greased baking pan, spreading evenly for a uniform bake.
  5. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow the brownies to cool completely before frosting.
Frosting
  1. For the frosting, mix the powdered sugar, cocoa powder, softened butter, and brewed coffee until smooth and creamy.
  2. Spread the frosting generously over the brownies.
  3. Finally, cut into squares and serve your Mocha Frosted Brownies.

Notes

Avoid overmixing to prevent tough brownies. Store in an airtight container; they can last for up to 5 days at room temperature or up to a week in the fridge. For freezing, wrap individual brownies and place in a freezer-safe bag, lasting up to 3 months.
