Ingredients

Main Ingredients
  • 8 ounces orzo pasta The base of your dish; if you’re gluten-free, try quinoa or rice pasta.
  • 1 tablespoon olive oil Adds richness; feel free to substitute with butter for a creamy finish.
  • 8 ounces sliced button mushrooms Creates a savory umami flavor; any variety, such as cremini or shiitake, works.
  • 2 ounces sun-dried tomatoes, finely chopped Brings a tangy sweetness; for a milder taste, use fresh tomatoes.
  • 4 cloves garlic, minced Gives depth and aroma; substitute with garlic powder if needed.
  • 1 teaspoon chili flakes Adds a subtle heat, adjustable based on your spice tolerance.
  • 4 cups packed baby spinach, coarsely chopped Fresh greens bring brightness; kale is a hearty alternative.
  • ¼ cup grated parmesan cheese This finishes the dish with a creamy texture; omit for a vegan version or use a vegan cheese substitute.
Seasoning

  2. Add the sliced mushrooms and sauté for about 7-8 minutes, until they become golden and tender.
  3. Stir in the sun-dried tomatoes, minced garlic, and chili flakes. Cook for about a minute, just until fragrant.
Combining Ingredients

Notes

For an added layer of flavor, consider adding a splash of white wine when sautéing the mushrooms. Incorporate leftover veggies or proteins you have on hand to make this dish even heartier. To elevate presentation, serve with fresh basil or a sprinkle of red pepper flakes.
