Ingredients
  

Main Ingredients
  • 1 cup raw cashews Soak for 2 to 3 hours before use.
  • 1/2 cup Medjool dates Pitted.
  • 1/4 cup coconut flour For thickening the mixture.
  • 1/4 cup lemon juice Freshly squeezed for best flavor.
  • 1 tbsp lemon zest For garnish.
Optional Coatings
  • 1/2 cup coconut shreds
  • 1/2 cup crushed graham crackers

Method
 

Preparation
  1. Soak the raw cashews in hot water or with a pinch of salt for 2 to 3 hours.
  2. Drain and rinse the soaked cashews to remove excess salt.
Mixing
  1. In a food processor, blend the pitted dates, soaked cashews, and fresh lemon juice until smooth.
  2. Incorporate coconut flour into the mixture and blend again until creamy.
Chilling and Forming
  1. Chill the mixture in the fridge for at least 30 minutes.
  2. After chilling, shape the mixture into 1-inch balls.
Finishing Touches
  1. Optionally, roll the lemon balls in coconut shreds or crushed graham crackers for added texture.
  2. Garnish with lemon zest for added flavor and presentation.

Notes

For best results, soak the cashews adequately and use fresh lemon juice. Experiment with different toppings for variety.
