Preparation
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a separate bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, then stir in the oats and chocolate chips.
  6. Drop spoonfuls of the dough onto the prepared baking sheets.
  7. Bake for about 10-12 minutes until golden brown.
  8. Let cookies cool completely, then spread marshmallow fluff on the bottom of one cookie and sandwich with another.

Notes
