Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together balsamic vinegar, honey, minced garlic, olive oil, thyme, salt, and pepper.
  3. Place the chicken breasts in a large mixing bowl and coat them in the balsamic mixture.
Cooking
  1. Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil.
  2. Once hot, add the chicken breasts skin-side down and sear for about 5 minutes until golden brown.
  3. Flip the chicken breasts and pour the remaining balsamic mixture over the top.
  4. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
Serving
  1. Remove the skillet from the oven and let the chicken rest for 5 minutes.
  2. Slice the chicken and drizzle with the pan juices before serving.

Notes

For best results, ensure the skillet is hot before adding the chicken, and let the chicken rest before cutting to retain its juices. Store leftovers in airtight containers and can be reheated in the oven or microwave.
