Preparation
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together balsamic vinegar, honey, minced garlic, olive oil, thyme, salt, and pepper.
- Place the chicken breasts in a large mixing bowl and coat them in the balsamic mixture.
Cooking
- Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil.
- Once hot, add the chicken breasts skin-side down and sear for about 5 minutes until golden brown.
- Flip the chicken breasts and pour the remaining balsamic mixture over the top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
Serving
- Remove the skillet from the oven and let the chicken rest for 5 minutes.
- Slice the chicken and drizzle with the pan juices before serving.
