Preparation
- Preheat your oven to 375 degrees Fahrenheit.
- Season the chicken thighs with salt and pepper on both sides.
- Heat olive oil in a large cast iron skillet over medium-high heat.
- Sear the chicken thighs for 5 minutes on each side until golden brown.
- Remove the chicken, placing it on a plate and leaving the juices in the pan.
- Add butter and shallots to the hot skillet; cook for 2 minutes until shallots soften.
- Stir in garlic and cook for 30 seconds.
Cooking
- Combine peach preserves, chicken broth, honey, Dijon mustard, and thyme.
- Whisk the mixture together and heat for about 2 minutes until it starts to thicken.
- Return the seared chicken to the pan, nestling it into the sweet sauce.
- Layer sliced peaches on top of the chicken.
- Transfer the skillet to the oven and cook for 15-20 minutes until chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Garnish with fresh basil before serving.
Notes
Allow the chicken to rest for a few minutes before serving to lock in juices. Use an oven-safe skillet to minimize clean-up.
