Method
 

Preparation
  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Season the chicken thighs with salt and pepper on both sides.
  3. Heat olive oil in a large cast iron skillet over medium-high heat.
  4. Sear the chicken thighs for 5 minutes on each side until golden brown.
  5. Remove the chicken, placing it on a plate and leaving the juices in the pan.
  6. Add butter and shallots to the hot skillet; cook for 2 minutes until shallots soften.
  7. Stir in garlic and cook for 30 seconds.
Cooking
  1. Combine peach preserves, chicken broth, honey, Dijon mustard, and thyme.
  2. Whisk the mixture together and heat for about 2 minutes until it starts to thicken.
  3. Return the seared chicken to the pan, nestling it into the sweet sauce.
  4. Layer sliced peaches on top of the chicken.
  5. Transfer the skillet to the oven and cook for 15-20 minutes until chicken reaches an internal temperature of 165 degrees Fahrenheit.
  6. Garnish with fresh basil before serving.
