  • 500 ml Vegetable stock Provides a savory base.

Finishing Touches
  • 200 grams Cherry tomatoes, halved Adds sweetness and color.

Method
 

Preparation
  1. In a large saucepan, add the spaghetti, tinned tomatoes, sliced onion, sliced garlic, olive oil, pesto, salt, pepper, and vegetable stock.
Cooking
  1. Place the saucepan over medium heat, cover it, and cook for about 10 minutes, stirring occasionally, until the pasta is almost cooked.
  2. Stir in the cherry tomatoes and continue cooking for an additional 3 to 4 minutes, until the pasta is fully cooked and the cherry tomatoes have softened.
Serving
  1. Remove from heat and serve topped with the grated parmesan cheese.

Notes

To avoid sticking, stir pasta occasionally during the initial cooking phase. Adjust the consistency of the sauce by adding more vegetable stock if too thick. Experiment with different vegetables and proteins for variations.
