- In a large pot, heat olive oil over medium heat.
- Add frozen mixed vegetables and sauté for 3–4 minutes until heated through.
- Stir in shredded chicken, garlic powder, onion powder, salt, and pepper.
- Pour in chicken broth and heavy cream.
- Bring to a simmer and then add gnocchi.
- Cook for 5–7 minutes or until gnocchi are tender and the mixture is creamy.
- Garnish with fresh parsley before serving.
Notes
Serve hot, garnished with fresh parsley and a side salad for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for up to 2 months.
