Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add frozen mixed vegetables and sauté for 3–4 minutes until heated through.
  3. Stir in shredded chicken, garlic powder, onion powder, salt, and pepper.
  4. Pour in chicken broth and heavy cream.
  5. Bring to a simmer and then add gnocchi.
  6. Cook for 5–7 minutes or until gnocchi are tender and the mixture is creamy.
  7. Garnish with fresh parsley before serving.

Notes

Serve hot, garnished with fresh parsley and a side salad for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for up to 2 months.
