Ingredients
  

  • 1 lb ground beef
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup sliced white mushrooms
  • 3 cups beef broth (or vegetable broth)
  • 8 oz egg noodles
  • 1 cup sour cream
  • 1 tbsp olive oil
  • to taste salt and black pepper

Method
 

  1. In a large pot over medium heat, cook ground beef until browned, about 5–7 minutes. Remove and set aside.
  2. In the same pot, sauté diced onion in olive oil until translucent. Add garlic and mushrooms; cook until soft and fragrant.
  3. Pour in beef broth, scraping the bottom of the pot to deglaze. Return the beef to the pot and bring to a simmer.
  4. Stir in egg noodles. Simmer uncovered for 10–12 minutes until noodles are tender.
  5. Remove from heat. Stir in sour cream until fully incorporated. Season with salt and pepper to taste.

Notes

Make sure to remove the pot from heat before adding sour cream to keep the sauce velvety smooth. For meal prep, freeze before adding any dairy.
