- Heat the oil in a large cast-iron pan or Dutch oven over medium-high heat.
- Sauté the diced sweet onion and minced garlic for 1 minute until fragrant.
- Add the diced green and red bell peppers and diced celery; cook for 3-4 minutes until softened.
- Stir in the stewed tomatoes, tomato sauce, and tomato paste. Add hot sauce and Worcestershire sauce if using.
- Season with Creole seasoning, dried thyme, salt, black pepper, and red pepper flakes.
- Reduce heat to medium-low, let the mixture simmer for 20-30 minutes, stirring occasionally.
- Add the shrimp and cook for another 7-10 minutes until pink and cooked through.
- Taste and adjust seasoning before serving.
- Serve over rice and garnish with chopped parsley or green onions.
