Preparation
- Preheat your oven to 375°F (190°C).
- Using a melon baller, scoop out the top center portion of the onion, creating a well.
- Place the onion on a sheet of aluminum foil.
- Add the vegan butter into the well of the onion.
- In a small bowl, mix the Cajun seasoning with olive oil and pour it over the onion.
- Sprinkle additional salt or other spices if desired.
- Wrap the onion tightly in foil and place it in a baking dish or cast iron skillet.
Cooking
- Bake for 30 minutes.
- Unwrap the foil; if the onion isn't fork-tender and slightly caramelized, reseal it and bake for another 10 minutes.
- Switch the oven to broil, unwrap the onion again, drizzle with melted vegan butter or olive oil, and broil for 5-10 minutes, watching closely.
Serving
- Serve warm, garnished with parsley, and enjoy with rice or roasted veggies.
Notes
Avoid not peeling the onion completely, as it may affect cooking. Overcooking or undercooking can lead to undesirable textures. Skipping the cooling phase after broiling results in an overly hot dish. For a smoky flavor, try adding liquid smoke to the Cajun seasoning blend.
