  • 1 teaspoon salt Enhances the natural flavors.
  • 1/2 teaspoon hot pepper flakes Optional, for spice lovers.
  • 2 tablespoons Italian parsley Adds freshness and color.
  • 3.5 tablespoons olive oil Provides richness and helps with cooking.

Method
 

Preparation
  1. Preheat the oven to 350°F (180°C).
  2. In a medium bowl, combine tomatoes, oregano, basil, salt, hot pepper flakes, Italian parsley, and 2 1/2 tablespoons olive oil. Mix gently to blend flavors.
  3. Line a baking pan with parchment paper for easy cleanup.
  4. Place fish fillets in the pan and generously top them with the tomato mixture.
  5. Drizzle with an additional tablespoon of olive oil and fold the parchment to cover the fish completely.
Cooking
  1. Cook in the preheated oven for 15-20 minutes until the fish flakes easily with a fork.
  2. Uncover the fish, drain any excess water, and increase the heat to 400°F (200°C).
  3. Bake for another 5 minutes until the top is lightly golden and bubbling.
  4. Remove from the oven and serve immediately.

Notes

Use fresh, quality fish for the best flavor. Let the fish rest for a minute after baking before serving to allow juices to redistribute. Optional variations include using shrimp or scallops, cherry tomatoes, or adding capers for a Mediterranean flair.
