Preparation
- Preheat the oven to 350°F (180°C).
- In a medium bowl, combine tomatoes, oregano, basil, salt, hot pepper flakes, Italian parsley, and 2 1/2 tablespoons olive oil. Mix gently to blend flavors.
- Line a baking pan with parchment paper for easy cleanup.
- Place fish fillets in the pan and generously top them with the tomato mixture.
- Drizzle with an additional tablespoon of olive oil and fold the parchment to cover the fish completely.
Cooking
- Cook in the preheated oven for 15-20 minutes until the fish flakes easily with a fork.
- Uncover the fish, drain any excess water, and increase the heat to 400°F (200°C).
- Bake for another 5 minutes until the top is lightly golden and bubbling.
- Remove from the oven and serve immediately.
Notes
Use fresh, quality fish for the best flavor. Let the fish rest for a minute after baking before serving to allow juices to redistribute. Optional variations include using shrimp or scallops, cherry tomatoes, or adding capers for a Mediterranean flair.
