Preparation

  3. Cut the ends off each zucchini, then slice them lengthwise into quarters, and cut the quarters into 1-inch chunks.
  4. In a bowl, toss the zucchini with olive oil, smoked paprika, rosemary, salt, and pepper, ensuring all pieces are coated.
Cooking
  1. Spread the zucchini on the prepared baking sheet, ensuring they are evenly spaced.
  2. Roast the zucchini in the oven for 10 minutes, then move the baking sheet to the lower rack and roast for another 10 minutes or until they are light golden brown and tender.

Notes

For a crispy finish, broil the zucchini for an additional 2-3 minutes after roasting. You can substitute zucchini with bell peppers or asparagus for variety.
