  • 1 ⅔ cups oat milk or unsweetened almond milk Adds creaminess and depth.

  • ¼ cup pure maple syrup Offers natural sweetness.
  • 1 Tbsp vanilla extract Enhances the flavor profile.
  • 1 tsp ground cinnamon Adds aromatic warmth.
  • cup all-purpose flour Helps to thicken the custard.
  • cup coconut sugar Provides a rich, caramel-like sweetness.
  • ½ tsp ground cinnamon For an extra touch of spice.
  • 5 Tbsp cold unsalted butter Adds richness and helps with the topping.

Method
 

Preparation (Night Before)
  1. Cut brioche bread into 1-inch cubes and place them in a 9x13-inch baking dish.
  2. In a large bowl, whisk together oat milk or almond milk, eggs, maple syrup, vanilla extract, ground cinnamon, all-purpose flour, and coconut sugar until smooth.
  3. Pour the custard mixture over the bread cubes, making sure all pieces are well coated.
  4. Cover the baking dish tightly with plastic wrap or foil and refrigerate overnight.
Baking (Day Of)
  1. Preheat the oven and bake the casserole at 350°F (175°C) until the top is golden brown and the custard is set.
  2. Let it cool slightly and serve warm with optional toppings.

Notes

For best results, use stale brioche for better absorption of the custard. Additionally, consider layering in fresh fruits or nuts before baking for extra flavor.
