  • 1/2 cup Brown sugar Can replace with coconut sugar for a lower glycemic index.
  • 2 tsp Vanilla extract Use pure vanilla for the best taste.
  • 1 tsp Cinnamon Adjust according to your preferences.
  • 1/4 tsp Nutmeg Consider omitting if not a fan.

Method
 

Preparation
  1. Cut the brioche into bite-sized cubes for even soaking and baking.
  2. In a large bowl, whisk together eggs, milk, brown sugar, vanilla extract, cinnamon, and nutmeg until well combined.
  3. Place the bread cubes in a greased 9x13-inch baking dish, then pour the custard mixture over the top, pressing the bread gently to soak it all.
  4. Cover the dish with plastic wrap or a lid and refrigerate overnight.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Remove the dish from the refrigerator and bake covered for 30 minutes.
  3. Uncover and bake for an additional 15 minutes until golden and set.
Serving
  1. Allow the bake to cool slightly before serving for better texture.

Notes

Serve warm with a side of fresh seasonal fruits or whipped cream. Store leftovers in an airtight container for up to three days, or freeze portions for up to 2 months.
