Dough Ingredients
  • 1 1/4 cups warm water Aim for 105-110°F to activate.
  • 1/2 tsp active dry yeast Instant yeast can be used as a substitute.
  • 1 tsp honey Sugar can be used instead.
  • 1/2 Tbsp fine sea salt Kosher salt can serve as an alternative.
  • 3 1/3 cups all-purpose flour Whole wheat or bread flour can also be used.

Method
 

Preparation
  1. In a small bowl, stir together warm water, honey, and salt, then sprinkle with active dry yeast and let sit for 5 minutes before stirring.
  2. Measure flour in a large mixing bowl, make a well in the center, and pour the yeast mixture into the well.
  3. Stir until the dough comes together, then knead by hand for 2 minutes.
  4. Cover and let rise at room temperature for 4-5 hours.
  5. Transfer to a floured surface, divide in half, and fold each piece over 8 times to develop gluten.
  6. Form balls and refrigerate overnight.
  7. Remove from fridge 1 hour before use.
Cooking
  1. Preheat oven to 550°F with a pizza stone or inverted baking sheet.
  2. Roll out dough to a 10-12 inch circle, add sauce and toppings of your choice, then bake for 8-10 minutes until golden.

Notes

For extra crunch, pre-bake the crust for a few minutes before adding toppings. Use a pizza peel to transfer the pizza to your hot stone; flour it well to prevent sticking. Try mixing in herbs or garlic powder into your dough for added flavor.
