Preparation
- In a small bowl, stir together warm water, honey, and salt, then sprinkle with active dry yeast and let sit for 5 minutes before stirring.
- Measure flour in a large mixing bowl, make a well in the center, and pour the yeast mixture into the well.
- Stir until the dough comes together, then knead by hand for 2 minutes.
- Cover and let rise at room temperature for 4-5 hours.
- Transfer to a floured surface, divide in half, and fold each piece over 8 times to develop gluten.
- Form balls and refrigerate overnight.
- Remove from fridge 1 hour before use.
Cooking
- Preheat oven to 550°F with a pizza stone or inverted baking sheet.
- Roll out dough to a 10-12 inch circle, add sauce and toppings of your choice, then bake for 8-10 minutes until golden.
Notes
For extra crunch, pre-bake the crust for a few minutes before adding toppings. Use a pizza peel to transfer the pizza to your hot stone; flour it well to prevent sticking. Try mixing in herbs or garlic powder into your dough for added flavor.
