  • 2 pounds Yukon Gold or Russet potatoes Choose for their crispiness.
  • 3 tablespoons Olive oil Can substitute with avocado oil for higher smoke point.
  • 1 cup Grated Parmesan cheese Pecorino or nutritional yeast are good alternatives.
  • 1 teaspoon Garlic powder Fresh minced garlic works as well.
  • 1 teaspoon Onion powder Shallots can be used as a fresh alternative.
  • 1 teaspoon Salt Feel free to use garlic salt for extra flavor.
  • 1/2 teaspoon Pepper
  • 2 tablespoons Fresh parsley For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the potatoes into bite-sized pieces.
  3. In a large bowl, toss the potatoes with the olive oil, Parmesan cheese, garlic powder, onion powder, salt, and pepper until evenly coated.
Cooking
  1. Spread the potatoes in a single layer on a baking sheet.
  2. Roast in the oven for 25-30 minutes, or until golden and crispy, stirring halfway through.
  3. Remove from the oven, garnish with fresh parsley, and serve hot.

Notes

Ensure not to crowd the baking sheet to avoid steaming. Using oil is essential for a golden crust.
