Ingredients

Main Ingredients
  • 2 pieces chicken breasts Lean protein source, essential for meal prep.
  • 1 cup roasted red peppers, chopped Adds sweetness and vibrant color; use jarred for convenience.
  • 1 cup heavy cream Creates a rich sauce; can substitute with half-and-half for a lighter option.
  • 1 cup Parmesan cheese, grated Key for flavor; fresh cheese melts better than pre-grated.
  • 2 cups bowtie pasta Fun shape that’s great for holding the sauce; feel free to use whole wheat.
  • 2 tablespoons olive oil For cooking the chicken; consider avocado oil for a higher smoke point.
  • 1 teaspoon garlic, minced Adds aromatic flavor; fresh is best, but powdered can work in a pinch.
  • to taste Salt and pepper Enhances all other flavors; adjust to your preference.
  • to taste Fresh basil for garnish Brightens the dish; fresh herbs elevate any meal experience.

Method

Cooking the Pasta
  1. Begin by cooking the bowtie pasta according to the package instructions. Drain and set aside. This step typically takes around 8-10 minutes.
Searing the Chicken
  1. In a skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown and fully cooked, about 6-7 minutes per side. Remove from skillet and slice.
Sautéing Garlic and Peppers
  1. In the same skillet, add minced garlic and chopped roasted red peppers. Sauté for 2 minutes until fragrant and softened.
Creating the Sauce
  1. Pour in the heavy cream and stir in the grated Parmesan cheese until melted and creamy, which should take about 2-3 minutes.
Combining Everything
  1. Add the cooked pasta and sliced chicken to the skillet, tossing to combine for about 1-2 minutes until coated in the sauce.
Garnishing and Serving
  1. Garnish with fresh basil and additional Parmesan if desired. Serve immediately for the best flavor and texture.

Notes

Ensure to season well and avoid overcooking the chicken. Reserve a bit of pasta water to loosen the sauce if it becomes too thick. Consider adding sautéed onions or mushrooms for extra flavor.
