Zucchini Preparation
  • 2 medium zucchini (sliced into 1/4 to 1/2-inch rounds) Zucchini is low-calorie and provides essential nutrients.
  • 1 tablespoon olive oil Adds healthy fats; consider avocado oil as a substitute.
Seasoning
  • 1/4 teaspoon sea salt Enhances flavor; adjust to taste.
  • 1/4 teaspoon black pepper For a touch of heat; leave out if kids prefer milder flavors.
  • 1/4 teaspoon garlic salt Infuses a delicious garlicky taste.
Topping
  • 1 cup freshly grated parmesan (pre-shredded or shaved is fine) Adds rich flavor and is a great source of protein.

Method
 

Preparation
  1. Preheat your oven to 450°F.
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. Place zucchini slices on the baking sheet and drizzle with olive oil. Toss until all slices are well-coated in oil.
  4. Spread the zucchini out into a single layer. Then, sprinkle generously with garlic salt, sea salt, and black pepper.
  5. Top each zucchini slice with grated parmesan.
Cooking
  1. Bake on the center rack for about 10 minutes until fork tender.
  2. Set your broiler to high and broil the zucchini for 2 to 3 minutes until the cheese is bubbly and browned.
Serving
  1. Allow the dish to cool slightly before serving.

Notes

Do not overcrowd the baking sheet. Slice the zucchini uniformly for even cooking. It's great served with protein or over grains.
