Ingredients

Main Ingredients
  • 2 pieces yellow peaches Choose ripe peaches for the best flavor.
  • 1 piece cucumber Opt for English cucumbers for fewer seeds.
  • 1/3 cup finely chopped red onion Provides a sharp bite that complements the sweetness.
  • 1 Tbsp finely chopped fresh mint Substitute with basil for a twist.
Dressing Ingredients
  • 2 Tbsp canola oil A neutral oil that binds the dressing without overpowering.
  • 1 Tbsp rice vinegar Apple cider vinegar can work as a substitute.
  • 1/2 piece lime Juiced; lemon can also be used.
  • 1 tsp honey Adjust or omit for a sugar-free diet.
  • 1/4 tsp salt Use sea salt for a touch of sophistication.

Method

Preparation
  1. Peel and seed your cucumber, ensuring it has a light and refreshing taste.
  2. Remove the pits from the peaches, slicing them in half. The riper they are, the easier this will be.
  3. Dice the peaches and cucumber into ½ inch cubes for a perfect balance of flavors.
Making the Dressing
  1. In a large bowl, combine the canola oil, rice vinegar, lime juice, honey, and salt. Whisk until combined.
Mixing the Salad
  1. Gently add the chopped peaches, cucumber, red onion, and mint to the dressing. Toss everything to coat evenly.
Marinating
  1. For the best flavor, let the salad sit for 30 minutes to 2 hours to deepen the flavors.

Notes

Serve chilled alongside grilled chicken or fish. Store leftovers in an airtight container for up to three days, but best enjoyed fresh.
