Ingredients
  

Peach Filling
  • 4 pounds fresh peaches Substitute with about 9 cups of frozen peach slices, thawed if out of season.
  • 3/4 cup granulated sugar Adjust to taste or use coconut sugar for a healthier option.
  • 2 1/2 tablespoons lemon juice Apple cider vinegar can work in a pinch.
  • 2 tablespoons cornstarch Can be swapped for arrowroot powder if you're avoiding corn.
Topping
  • 1/4 teaspoon ground cinnamon Try cardamom for a unique twist.
  • 1/4 teaspoon ground nutmeg Skip if you’re not a fan.
  • 1/2 cup unsalted butter, melted Vegan butter or coconut oil can be substituted.
  • 1 cup all-purpose flour Gluten-free flour blend works too.
  • 1/2 cup granulated sugar (for topping) Adjust to your liking.
  • 2 teaspoons baking powder Ensure it’s fresh for the best results.
  • 1/4 teaspoon kosher salt Essential for enhanced flavor.
  • 1 cup milk Almond or coconut milk can serve as an alternative.

Method
 

Prepare the Peach Filling
  1. In a large pot, combine the sliced peaches, 3/4 cup of sugar, lemon juice, and cornstarch.
  2. Cook over medium-high heat, stirring occasionally, until the mixture is bubbly and thickened. Remove from heat and set aside to cool slightly.
Make the Topping
  1. Preheat your oven to 375°F (190°C).
  2. Pour melted butter into a 9x13-inch baking dish.
  3. In a medium bowl, whisk together the flour, the remaining 1/2 cup sugar, baking powder, and salt.
  4. Add the milk, stirring until smooth. Pour this mixture over the melted butter but do not stir.
Assemble and Bake
  1. Spoon your cooked peaches over the batter without mixing.
  2. Sprinkle the top with ground cinnamon and nutmeg.
  3. Place the dish in the preheated oven and bake for 45 to 50 minutes, or until the top is puffed and golden.
Serve
  1. Allow to cool slightly before serving warm or cold.
  2. Serve with a scoop of vanilla ice cream for best results.

Notes

Avoid over-cooking the peaches to prevent mushiness. Always pour the batter over the butter without stirring for the iconic layered texture. Don’t forget the salt for flavor enhancement.
