Method
 

Preparation
  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Spray a 9 by 13 inch baking dish with cooking spray to prevent sticking.
  3. In a large bowl, combine the peaches, 2/3 cup sugar, lemon juice, and cornstarch. Stir well to combine and let rest for 10 minutes.
  4. In another mixing bowl, whisk together the flour, baking powder, and salt.
Mixing
  1. In a stand mixer, beat the room-temperature butter and 3/4 cup sugar until light and fluffy, about 3-5 minutes.
  2. Beat in the milk, egg, and vanilla until well combined.
  3. Gradually add the flour mixture to the butter mixture, beating until just combined.
Assembly and Baking
  1. Pour the peach mixture, along with its juices, into the prepared baking dish.
  2. Drop spoonfuls of the dough on top, spreading it as evenly as possible.
  3. Place in the oven and bake for 45 to 50 minutes until the topping is golden brown and a toothpick comes out clean from the center.

Notes
