Preparation
- Preheat the oven to 350°F and prepare a 9x13 baking pan with nonstick cooking spray.
- In a bowl, mix the flour and salt for the crust, then cut in the cold butter until crumbly. Press this mixture firmly into the bottom of the pan and bake for 20 minutes until edges are lightly browned.
Filling
- Combine the sliced peaches, sugar, cornstarch, vanilla, lemon juice, and cinnamon in a bowl. Spoon this peach mixture evenly over the baked crust.
Topping
- In another bowl, mix together the flour, sugar, and cold butter for the topping until crumbly. Sprinkle this evenly over the peaches.
Baking
- Place the pan in the oven and bake for 50-65 minutes, or until the topping is golden brown and the peaches are soft. Remove and allow to cool completely in the pan.
Icing
- In a bowl, whisk together the powdered sugar, milk, and vanilla extract for the icing. Drizzle this over the cooled bars and let it set before slicing and serving.
Notes
Use ripe, firm peaches for best flavor. Don't overbake the topping to avoid burning. Allow adequate cooling time for cleaner cuts.
