Method
 

Preparation
  1. Wash the peaches, tomatoes, cucumber, and red bell pepper thoroughly under cool running water.
  2. Dice the peaches, tomatoes, cucumber, and red bell pepper into small chunks.
  3. Finely chop the red onion and garlic.
Cooking
  1. In a blender, combine the diced peaches, tomatoes, cucumber, red bell pepper, red onion, and garlic.
  2. Blend until smooth for about 30-60 seconds.
  3. While blending, slowly drizzle in the olive oil and red wine vinegar to emulsify.
  4. Season with salt and pepper, blending briefly to combine.
Serving
  1. Transfer the soup to a large bowl and chill in the refrigerator for at least 30 minutes.
  2. Serve cold in bowls, garnished with additional diced peaches or chopped herbs if desired.

Notes

Use ripe peaches for the best sweetness and flavor. Adjust salt and vinegar to taste before serving. Can be easily customized.
