For the crust and filling

For the glaze
  • 1 cup powdered sugar Used for the glaze

Method
 

Preparation
  1. Preheat the oven to 350 degrees F and grease a 15x10 rimmed baking sheet.
  2. In a large bowl, cream together the butter, granulated sugar, and salt until light and fluffy.
  3. Add the eggs one at a time, mixing well and scraping down the sides.
  4. Stir in the vanilla and almond extracts.
  5. Gradually mix in the all-purpose flour until just combined, forming a soft dough.
Assembly
  1. Take 3 cups of the dough and spread it evenly into the prepared baking pan.
  2. Spread the peach pie filling over the dough, leaving a 1/4-inch border around the edges.
  3. Drop spoonfuls of the remaining dough over the peach filling to create a crumbly topping.
Baking
  1. Bake the bars for 30-35 minutes, or until the top is golden brown and set.
  2. Allow the bars to cool completely in the pan before icing.
Glazing
  1. In a bowl, whisk together the powdered sugar, vanilla, and enough milk or cream to achieve a thick icing consistency.
  2. Drizzle the icing over the cooled bars creating beautiful patterns.

Notes

For optimum texture, use chilled butter and ensure eggs are at room temperature before mixing. These bars can be made a day in advance and store well in an airtight container.
