Method
 

Preparation
  1. Slice the tomatoes and cucumbers, and thinly slice the red onion.
  2. Thinly slice the peaches, aiming for even pieces.
  3. Artfully arrange the sliced tomatoes, cucumbers, peaches, and red onion on a serving platter.
  4. Sprinkle thinly sliced basil leaves evenly over the top of the salad.
  5. Drizzle the olive oil and white balsamic vinegar evenly over the salad.
  6. Season with salt and pepper according to your preference.
  7. Garnish with a sprig of basil and chill the salad in the refrigerator for about 30 minutes.
  8. Serve chilled.

Notes

For an exciting twist, try using other seasonal fruits like nectarines or berries. Store in an airtight container in the refrigerator for up to 2 days; best enjoyed fresh.
