Ingredients

Base Ingredients
  • ½ cup full-fat Greek yogurt Provides a creamy base rich in protein; opt for low-fat Greek yogurt if you’re counting calories.
  • ¼ cup peanut butter powder Adds intense peanut flavor with less fat than traditional peanut butter.
  • 1 tablespoon peanut butter For that extra creaminess and richness; a nut or seed butter can be used if you have nut allergies.
  • ½ tablespoon maple syrup A touch of natural sweetness; honey can work as a substitute for a vegan option.
Coating Ingredients
  • ½ cup Lily’s dark chocolate chips Offers a touch of indulgence without the added sugar; unsweetened chocolate or carob chips are alternatives.
  • 1 teaspoon coconut oil Helps the chocolate melt smoothly; butter can be used for a different flavor profile.
  • to taste dash flaky sea salt Enhances the sweetness and adds a gourmet touch.

Method

Preparation
  1. Add the Greek yogurt, peanut butter powder, peanut butter, and maple syrup to a mixing bowl. Stir well until combined and creamy.
  2. Use a medium cookie scoop to portion the mixture onto a parchment-lined plate or small baking tray. This will yield approximately six bites.
  3. Place the assembled bites in the freezer for about 10-20 minutes, or until they are solid to the touch.
  4. In a separate bowl, melt the chocolate chips with coconut oil until smooth.
  5. Dip each frozen yogurt bite into the melted chocolate, ensuring they are fully coated.
  6. Optional: Sprinkle with flaky sea salt for an extra burst of flavor before placing them back in the refrigerator to set the chocolate.
  7. Once set, enjoy immediately or store the bites in the fridge for up to 3-4 days.

Notes

These bites can be frozen for up to 3 months in a freezer-safe container. Allow them to thaw slightly before enjoying. Serve with fresh fruit for an extra dose of vitamins and fiber.
