  • 1/2 cup peanut butter Provides depth and creaminess; try crunchy peanut butter for texture.
  • 6 cups Rice Krispie cereal The classic base; swap with gluten-free cereal for a gluten-free version.
  • 8 oz chocolate chips A luscious topping; use milk, dark, or white chocolate based on your preference.
  • 2 teaspoons vegetable oil Helps achieve a smooth chocolate drizzle; olive oil also works.

Method
 

Preparation
  1. Lightly grease a 9x13-inch pan with butter or non-stick cooking spray.
  2. In a large saucepan, melt the butter, mini marshmallows, and peanut butter together over low heat while stirring gently.
  3. Once melted, remove from heat and stir in the Rice Krispies until evenly coated.
  4. Press the mixture into the pan using a lightly sprayed hand or spatula.
  5. Add the chocolate chips to a medium-sized heatproof bowl. Microwave for 45-second intervals on medium power, stirring in between.
  6. Once almost melted, stir until smooth and mix in the vegetable oil.
  7. Pour the chocolate over the top of the bars and let harden at room temperature for about 2 hours.
  8. Cut into squares and store in an airtight container at room temperature.

Notes

Make sure your marshmallows are fresh. Always use low heat when melting the peanut butter and marshmallows to avoid burning. Keep your hands lightly sprayed with non-stick spray to avoid sticking when pressing the mixture into the pan.
