  1. Preheat the oven: Set to 350°F (175°C) and line a muffin tin with paper liners.

  3. Combine wet ingredients: In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until thoroughly mixed.
  4. Combine wet and dry: Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Add pecans: Gently fold in the chopped pecans.
  6. Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake: Place in the oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
