Ingredients

Dough Ingredients
  • 6 Tbsp lukewarm water Activates yeast; make sure it’s not too hot to prevent killing the yeast.
  • 5 oz buttermilk (at room temperature) Adds moisture and tanginess; milk can be used as a substitute.
  • 1 large egg (at room temperature) Provides richness; if you’re vegan, use a flax egg or similar alternative.
  • 2 oz melted butter Enriches flavor and moistness; ghee works wonderfully as a substitute.
  • 16 oz all-purpose flour (or bread flour) Gives structure; choose bread flour for a chewier texture.
  • 2 oz sugar Sweetness that helps activate yeast; can substitute with coconut sugar for a healthier option.
  • 1 tsp salt Enhances flavor; don’t skip this!
  • 1.5 tsp quick-rise yeast (or regular dried yeast) Ensures a perfect rise; keep yeast fresh for best results.
  • 16 oz olive oil (for frying) A neutral oil is essential for frying; you can use canola or vegetable oil too.
  • 4 oz sugar (for coating) Consider cinnamon sugar for extra flavor.
Filling (optional)
  • Jam, chocolate hazelnut spread, or whipped cream Customize your treat!

Method

For the Bread Machine
  1. Place all wet ingredients in the bread machine pan.
  2. Add in dry ingredients, ensuring yeast is last so it doesn't touch the liquid.
  3. Select the 'Dough' cycle and let the machine do its job.
For Stand Mixer with Dough Hook
  1. Dissolve yeast in lukewarm water; let it activate for 5 minutes.
  2. Mix sugars and salt in a bowl, then slowly add flour.
  3. Pour in yeast mixture, buttermilk, egg, and melted butter; mix until combined.
  4. Knead for about 5 minutes until a smooth dough forms.
By Hand
  1. Prepare yeast in lukewarm water and let it sit until frothy.
  2. In a large mixing bowl, combine sugars, salt, and flour.
  3. Make a well in the center; add yeast mixture, buttermilk, egg, and melted butter. Mix to combine.
  4. Transfer dough to a floured surface and knead for about 10 minutes until smooth.

Notes

Store your cooled doughnuts in an airtight container at room temperature to maintain their soft texture. Enjoy within 1-2 days for best results. You can freeze unfilled doughnuts in a single layer and thaw them when ready to serve.
