For the Burgers
  • 1 lb ground beef Use high-quality beef for juiciness.
  • 1 tsp fresh black pepper Enhances overall flavor.
  • 1 tsp salt Essential for flavor.
  • 1 tbsp butter Optional for grilling the patties.
  • 4 slices sliced tomato Adds freshness.
  • 4 leaves leaf lettuce Provides crisp texture.
  • 4 slices sliced red onion Adds a sharp flavor.
  • 4 buns sandwich buns For serving.

Method
 

Preparation
  1. In a stand mixer or bowl, combine the cheddar cheese, cream cheese, mayonnaise, pimentos, Old Bay seasoning, and Tabasco; blend until smooth and creamy. Season with salt to taste.
  2. In another bowl, gently combine the ground beef, Old Bay, salt, and pepper; divide into four equal-sized patties and create a finger indent in the center of each patties.
  3. Heat a grill or cast iron skillet over medium-high heat; add butter if using a skillet.
Cooking
  1. Grill or fry the burgers for 4-5 minutes on each side until the internal temperature reaches 160°F.
  2. Add big scoops of pimento cheese to the top of each burger and cover for the last two minutes to allow the cheese to melt.
  3. Butter the buns and grill them for about a minute until golden.
Assembly
  1. Serve the burgers with lettuce, red onion, and tomato, adding extra pimento cheese if desired.

Notes

Let the pimento cheese sit for at least 30 minutes before serving for best flavor. Use high-quality beef for juiciness, and do not overwork the meat.
