Preparation
- Prep all your ingredients: cube the chicken and pineapple, and slice the green onions.
Cooking Rice
- In a saucepan, bring 2 cups of water to a boil. Add the jasmine rice, cover, and let it simmer on low heat for about 15 minutes until tender.
Sauté Chicken
- Heat a large skillet over medium heat. Add the cubed chicken breast and cook until golden brown, about 5–7 minutes.
Add Pineapple and Broth
- Stir in the cubed pineapple and chicken broth. Let it simmer for about 5 minutes.
Combine and Serve
- Once the rice is ready, add it to the skillet and mix well. Heat through for an additional 2–3 minutes. Garnish with sliced green onions and serve hot.
Notes
Use low-sodium chicken broth for a lighter meal. For gluten-free, verify broth ingredients. Leftovers can be used to make fried rice.
