Preparation
  1. In a blender, combine cottage cheese, almond milk, honey, vanilla extract, and salt. Blend until smooth.
  2. Pour the mixture into a bowl and stir in the crushed pistachios.
  3. Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions.
  4. Once churned, transfer to a container and freeze for at least 2 hours before serving.

Notes

Serve in chilled bowls garnished with additional crushed pistachios or fresh mint leaves. Store leftover ice cream in an airtight container in the freezer for up to two weeks.
