Preparation
  1. In a mixing bowl, combine the peeled and roughly chopped overripe plantain, gluten-free flour, melted butter, eggs, milk, and nutmeg.
  2. Use a whisk or blender to create a smooth batter, adding extra milk if necessary.
Cooking
  1. Place a non-stick skillet over medium heat and add a little oil or butter.
  2. Pour in the batter, cooking until bubbles appear on the surface, then flip and cook until golden brown on both sides, approximately 2-3 minutes per side.
  3. Continue with the remaining batter, adjusting heat as necessary.
Serving

Notes
