Cooking Instructions
  1. In a large skillet, heat olive oil over medium heat. Add sliced fennel and sauté until tender, about 5 minutes.
  2. Pour in the vegetable or fish stock, orange juice, and zest. Bring to a simmer.
  3. Season cod fillets with salt and pepper, then gently place them in the skillet.
  4. Cover and poach for about 10-12 minutes, or until the cod is opaque and flakes easily with a fork.
  5. Serve garnished with fresh parsley and additional orange slices if desired.
