Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Prepare the chicken by rinsing it under cold water.
  3. Pat the chicken dry with paper towels to ensure crispy skin.
  4. Place the chicken in a roasting pan.
  5. Rub the olive oil generously over the chicken.
  6. Season the chicken thoroughly with salt, pepper, and garlic.
  7. Sprinkle thyme both on the outside and inside of the chicken.
Cooking
  1. Transfer the chicken to the preheated oven.
  2. Roast for 1 hour or until the internal temperature reaches 165°F (74°C).
  3. Keep an eye on the skin; it should turn golden brown and crispy.
  4. Halfway through cooking, you may baste the chicken with its own juices to enhance flavor.
Serving
  1. Once cooked, remove the chicken from the oven and let it rest for at least 10 minutes.
  2. Carve the chicken and arrange the pieces on a serving platter.
  3. Optionally, drizzle with additional olive oil or add more herbs for garnish.

Notes

Allow the chicken to come to room temperature before cooking to ensure even cooking. Basting occasionally can help keep the meat juicy. Use a meat thermometer to accurately check doneness.
