Preparation
- Line a muffin tin with liners and set aside.
- Place the chocolate chips and coconut oil into a microwave-safe bowl. Heat on high for 20-second increments, stirring in between, until fully melted.
- Scoop 1 tablespoon of the melted chocolate into each muffin liner. Tilt the muffin tin slightly to ensure the chocolate coats the sides well, going above halfway.
- Freeze the muffin tin for 2 minutes, then set aside any remaining chocolate.
- After 2 minutes, add ½ tablespoon of melted chocolate to each liner, repeating the tilting process. Freeze for another 5 minutes.
Making the Filling
- While the chocolate shell freezes, stir all the filling ingredients in a large mixing bowl until well combined.
- Once the chocolate shells are frozen, scoop 2 tablespoons of filling into each cup.
- Top each cup with 1 tablespoon of the remaining melted chocolate, adding more coconut oil if it’s not pourable. Shake the pan to fully cover the tops of the cups.
Freezing
- Freeze the cups for at least 30 minutes.
- Enjoy these delightful treats immediately or store in a freezer-safe bag for later enjoyment!
