Preparation
- STEP 1: Combine the pudding ingredients. Add all of the ingredients for the chia seed pudding to a large bowl and stir until well combined.
- STEP 2: Chill the pudding. Cover the bowl and refrigerate for at least 3 hours or overnight. The longer it sits, the thicker it will get; add more almond milk for a thinner consistency if desired.
- STEP 3: Prepare the lemon curd. In a small bowl, whisk together the egg and egg yolks, then set aside.
Cooking
- STEP 4: Cook the lemon mixture. In a small saucepan, add honey, fresh lemon juice, lemon zest, and a pinch of sea salt, bringing to a gentle boil.
- STEP 5: Temper the eggs. Remove ΒΌ cup of the honey lemon mixture from the pot and whisk it into the whisked eggs to gently temper them.
- STEP 6: Incorporate the eggs. Transfer the tempered eggs back to the saucepan and whisk until fully combined.
- STEP 7: Thicken the curd. Cook the mixture over medium heat for 2 to 3 minutes, stirring constantly until it thickens and becomes frothy.
- STEP 8: Cool the curd. Remove from heat and transfer the lemon curd to a bowl. Let cool slightly, then cover with plastic wrap and refrigerate until chilled and thickened.
Assembly
- STEP 9: Assemble the dish. Serve the chilled chia seed pudding topped with or layered with the lemon curd.

Use fresh lemons for the best flavor; adjust sweetness to your liking; store leftovers in airtight containers in the fridge.
