Preparation
- Preheat the oven to 350 degrees F.
- Line a muffin tin with paper liners and lightly spray with baking spray.
- In a large mixing bowl, combine the flour, cinnamon, baking powder, baking soda, salt, nutmeg, and cloves.
Cooking
- In the bowl of a stand mixer, combine the brown sugar, vegetable oil, and granulated sugar. Beat until smooth.
- Mix in the eggs until just incorporated.
- Add the sour cream and mix to combine.
- Mix in the pumpkin puree until well blended.
- Gradually add the dry ingredients to the wet mixture and mix until just incorporated.
- Fill each muffin liner 3/4 of the way full with batter.
- Bake in the oven for 20 to 22 minutes or until a toothpick inserted into the center comes out clean.
Serving
- Let the muffins cool for 10 minutes, then transfer to a cooling rack to cool completely.
Notes
To maximize flavor, use fresh pumpkin puree. Avoid overmixing to keep them fluffy.
