Method
 

Preparation
  1. Preheat the oven to 350 degrees F.
  2. Line a muffin tin with paper liners and lightly spray with baking spray.
  3. In a large mixing bowl, combine the flour, cinnamon, baking powder, baking soda, salt, nutmeg, and cloves.
Cooking
  1. In the bowl of a stand mixer, combine the brown sugar, vegetable oil, and granulated sugar. Beat until smooth.
  2. Mix in the eggs until just incorporated.
  3. Add the sour cream and mix to combine.
  4. Mix in the pumpkin puree until well blended.
  5. Gradually add the dry ingredients to the wet mixture and mix until just incorporated.
  6. Fill each muffin liner 3/4 of the way full with batter.
  7. Bake in the oven for 20 to 22 minutes or until a toothpick inserted into the center comes out clean.
Serving
  1. Let the muffins cool for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

To maximize flavor, use fresh pumpkin puree. Avoid overmixing to keep them fluffy.
