Preparation
  1. Blend rolled oats until they are finely ground to make oat flour.
  2. In a bowl, mix oat flour, protein powder, coconut flour, baking powder, pumpkin pie spice, and salt.
  3. In a separate bowl, combine pumpkin puree, egg, and milk.
  4. Mix the dry and wet ingredients together using a whisk until just combined; do not overmix. Let the batter rest for 5 minutes.
Cooking
  1. Preheat a nonstick skillet over medium-low heat and add oil or butter.
  2. Scoop batter onto the skillet to form pancakes. Cook for 3-5 minutes until the edges are set, then flip and cook for another 1-2 minutes until golden brown.
