Ingredients

Noodle Ingredients
  • 8 oz Noodles (like ramen or soba) Any preferred noodle variety works.
Broth and Flavoring
  • 4 cups Chicken or vegetable broth Choose low-sodium for healthier options.
  • 3 tbsp Soy sauce Adds depth; low-sodium available.
  • 2 tbsp Sesame oil For that nutty flavor.
  • 2 cloves Garlic, minced Freshly minced is best for flavor.
  • 1 tbsp Ginger, grated Fresh ginger adds warmth.
Vegetables and Protein
  • 2 cups Vegetables (like bok choy, bell pepper, or carrots) Fresh veggies enhance nutrition and color.
  • 1 cup Protein (tofu, chicken, or shrimp) Customize based on dietary preferences.
  • 3 stalks Green onions, sliced Great garnish for freshness.
Garnish
  • 1/4 cup Cilantro Adds a fresh burst of flavor.

Method

Preparation
  1. Cook the noodles according to the package instructions until they're just tender, then drain and set aside.
  2. In a large pot, bring the chicken or vegetable broth to a gentle heat. Add in the soy sauce and sesame oil.
  3. Add the minced garlic and grated ginger to the broth and let it simmer to infuse the flavors.
Cooking
  1. Once the broth is simmering, add your choice of vegetables and protein. Let this bubble and simmer until the veggies are tender and your protein is cooked through.
  2. Add the cooked noodles to the pot, letting them soak in all the flavors. Stir gently.
Serving
  1. Serve hot, garnished with sliced green onions and cilantro for an additional touch.

Notes

For a creamier texture, stir in a dollop of coconut milk at the end. Store leftovers in an airtight container in the refrigerator for up to three days.
