Ingredients
  

For the Soup Base
  • 2 cans black beans Rinsed and drained
  • 1 can diced tomatoes
  • 1 medium onion Chopped
  • 3 cloves garlic Minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable broth Use low-sodium if desired
  • 2 tablespoons olive oil For sautéing
For Garnish
  • 1 cup fresh cilantro Chopped

Method
 

Preparation
  1. Rinse and drain the black beans.
  2. Chop the onion and mince the garlic.
  3. Gather all your spices and ingredients.
Cooking
  1. Heat the olive oil in a pot over medium heat.
  2. Add the onion and cook until soft (about 3 minutes).
  3. Stir in the garlic, cumin, and chili powder for another minute.
  4. Pour in the black beans, diced tomatoes, and vegetable broth.
  5. Let it simmer for about 15 minutes, stirring occasionally.
Serving
  1. Use a spoon to mash some beans against the side of the pot for a creamier texture.
  2. Taste and adjust seasoning with salt and pepper.
  3. Ladle into bowls and top with fresh cilantro. Enjoy!

Notes

Add a squeeze of fresh lime juice before serving for enhanced flavor. You can also swap in different types of beans or blend part of the soup for a smoother texture.
